To some readers, a great hotel room is merely the place where you rest up between memorable meals. This plush country-style inn has an English country home vibe—it was decorated by a London set designer— but many guests initially came for the menu, created by inn founder and James Beard Award-winner Patrick O’Connell. Indeed, the inn won the survey for the best hotel dining in America: it has a 14,000-bottle wine cellar and a French-influenced menu featuring “munchies” like foie gras with pear butter, or a Tin of Sin with American Osetra caviar and peekytoe crab. The hotel also tied at No. 1 in the U.S. for service, with such attentive amenities as afternoon tea, kitchen tours, and three housekeeping visits for your room per day.
Felicité, the fifth-biggest island in the Seychelles, is widely considered to be one of its most beautiful. Giant granite boulders lie scattered atop curvaceous hills like remnants of a gods’ pétanque match. Blue pigeons coo and roost in jungly vegetation. The sand is so powdery and pristine that it squeaks as you scuttle into the clear aquamarine shallows. And within all this almost-otherworldly natural splendour is a man-made retreat that is almost as pretty – and equally as green (how many other islands have solar-power panels, a reverse-osmosis plant and a patch of land for an organic kitchen garden?). The 30 glass-fronted rooms are set among boulders and trees, with wide decks and plunge pools outside, and polished wooden floors and furnishings in the hues of the sea inside. At the beach bar, giant hammocks are strung over the ocean from which to sip passionfruit Mojitos and mango ice-lollies. At breakfast, there are green smoothies, rainbow-coloured fruit platters and oysters; at night it’s French Champagne and fire-cooked lobster, followed by rum tastings in a cosy bar. In between all this taste-bud tantalising, there are hills to hike, reefs to dive around and palm trees to lie under and contemplate the delightful symmetry of a crab’s tracks or the puffiness of a cloud. Located in Quebec City, 200 yards from Fairmont Le Chateau Frontenac, Hotel Manoir Morgan has a terrace and rooms with free WiFi access. We were delighted with Manoir Morgan. It was a quiet oasis right in the heart of the busy historic area. The staff were all helpful and friendly and the rooms were very comfortable - huge beds! Windows opened when required and there was a Nespresso machine in the rooms. Breakfast next door was also excellent.
Big Sur is all about big views, and the Post Ranch Inn has become synonymous with the wild, dramatic beauty that is the Pacific Coast along California's Highway 1. The region's natural charms are reflected in the names of its 39 rooms - including Cliff House, Pacific Suite, Ocean House, Tree House, Mountain House and the Butterfly Rooms - and the spectacularly constructed recycled-redwood lodgings are designed to inspire awe. But the essence of any stay here is just whiling away the hours with someone you really like, letting time unspool in truly spectacular surroundings.

Manhattan? Like, so over. Food, fashion, music, art - it's all happening over the East River in Brooklyn. Of the clutch of hotels that have followed the wave, the 70-room Wythe, which opened in 2012, is the clear winner. This converted barrel factory is in Williamsburg, a five-minute subway ride from the island, and a hotbed of bars, restaurants and shops (Pies 'n' Thighs for Southern grub, Catbird for quirky jewellery). Owners Jed Walentas - scion of the New York real-estate family - Australian hotelier Peter Lawrence and Andrew Tarlow, who runs Brooklyn restaurants Diner and Marlow & Sons, have kept things industrial inside, with exposed brick, mosaic and tiled floors, and beamed ceilings. Bedrooms are particularly minimalist, with polished concrete floors, king-size beds and Manhattan views from floor-to-ceiling windows in west-facing rooms. There's even a thwack of skyline from the little window in the walk-in shower. The hotel's rooftop bar, The Ides, does great cocktails and is a raucous spot in summer, but it's the ground-floor restaurant, Reynard, that is a must for its super-fresh, veg-laden dishes including fluke crudo with fennel and caraway, and grass-fed steak with beets, goat's cheese and watercress. The hotel has no gym of its own, but guests are given a pass to Chalk down the road, a haunt for bench-pressing local hipsters.
At this palatial 32-acre hilltop estate, there's an art to the first impression: Because cars aren’t permitted beyond the front gate, visitors arrive at reception in a golf cart or, for VIPs, a horse-drawn carriage. In lieu of a formal check-in desk, a standard bearer greets guests by militarily clicking his heels before leading them under a shower of rose petals and into the former ruler of Hyderabad’s neo-Palladian palace. The rest of the experience is no less impressive, with museum-quality reception rooms furnished in late-Victorian style, gleaming with burnished wood and leather, and a gracious garden courtyard with trees and fountains is flanked by two wings housing most of the 60 rooms. (Just beyond one of the wings, the suites faithfully decorated in a grand Edwardian manner surround a smaller, star-shaped courtyard.)
