The Peninsula Beverly Hills earns a five-pearl rating, but as one of the best hotels in Beverly Hills, and perhaps in all of Los Angeles, that may be an understatement. Thanks to its attentive staff that discreetly caters to the rich and famous, its status as a luxury Hollywood destination has been steady since its opening in the early '90s. The dining is top-notch, the rooftop pool is an A-list playground, and the spa uses massage oils infused with diamonds. The 194 guest rooms have a floral decor that isn't for everyone, and the management may think it's too pedestrian to have in-room coffeemakers, but at these rates the lack of an Italian espresso machine seems like an oversight. On the plus side, a chauffeur and a Rolls-Royce come included with the rates. 

The contemporary-chic Viceroy has a retro Chicago façade and mid-century furnishings within. Textures and patterns grab the eye, including an abstract headboard wall, carpet that looks like a sand-hued topographic map, and—yes—quotes from Marcel Proust, reproduced on the lobby's 30-foot-wall. The ground level restaurant Somerset, from chef Lee Wolen, is a serious asset for the Viceroy; his creative American fare (don't miss the beet tartare and sausage-stuffed whole roasted chicken) matches the vaguely nautical, club-like setting. But don't skip the 18th floor, where he also does cocktails and bites at the swanky rooftop lounge Devereaux.
The Sebastian is a charming, upscale ski lodge set at the base of Vail Mountain in Colorado. Québec City not only has a fantastic Old Town which one can spend days exploring, but is in the centre of lovely countryside that offers an excellent range of scenic daytrips. The attractions are nearby, so no change of hotel will be necessary for any of these trips. Orleans Island is just 15 minutes drive from the Old Town. Aside from some great views of the St. Lawrence, Orleans Island is best known as a gourmet destination, with a number of great restaurants focussing on top quality local produce. Jacque Cartier National Park is just 30 minutes drive north and is known for its deep river valleys, pristine trails and extensive wildlife, including moose and red fox. Families and keen photographers may enjoy a trip on the Charlevoix Railway, which travels from Quebec City to La Malbaie, with much of the track running along the lovely St. Lawrence River.

This was founded in 2001 by siblings Joe and Catherine Bartolomei, whose great-grandfather migrated from Italy and acquired a ranch and vineyards, building the house where Catherine still lives today. She and Joe are a constant presence, checking in with regulars at the restaurant and joining in afternoon wine tastings (including a knockout red-field blend from their own Lost & Found label). Their deep Sonoma roots translate into perks for guests at local wineries, restaurants and shops, whose owners invariably light up at their mention. And the pair’s enthusiasm percolates through to the easygoing attitude of the longtime staff. You’re as likely to get a great oyster shack or hiking trail tip from the parking attendant as you are from the concierge desk. Of the bedrooms, the newer ones at the quieter, wooded end of the hotel are best, with porches that feel suspended among the trees. Inside you’ll find a conga drum refashioned as a cocktail stand, a vintage ladder propped against one wall under the vaulted wooden ceiling. A double-sided fireplace faces both the bedroom and the Adirondack chairs outside on the porch. The inn’s restaurant has become a destination in itself: chef Steve Litke has a light touch with his Mediterranean-inflected menu, including a delicate Hokkaido scallop with Moroccan spices, and a thyme-scented trio of rabbit (applewood-smoked loin, confit of leg, roasted rack with mustard cream). But you can take the electric car out and head westward to the coast and have lunch at the inimitable Marshall Store, where Sonoma’s best oysters (raw and wood-fire-grilled) are served on wooden barrels along the shore of Tomales Bay. The groundbreaking barefoot ethos created by husband-and-wife owners Sonu and Eva Shivdasani ensures immediate surrender. Explore the island by bike, stopping to bob, chat, and giggle in the warm ocean for hours. Seventy rustic, thatched-roof villas, each hidden in the jungle shade (no stilts over water here) are designed with pared-back simplicity: natural tones, soft textures, lots of driftwood. This was always destined to be the Ferrari of farm holidays, coming as it does from Soho House, which specialises in hotels top-loaded with glamorous naughtiness. Even so founder Nick Jones must be surprised at how enthusiastically his tribe has taken to tractor life. In December 2018, it adds 40 Piglets, dinky billets shaped like pig arcs, and 10 proper rooms built into the walled kitchen garden, to the original 40 clapperboard cabins, set along a river engineered to sashay through the place like a supermodel. The Waltons meets Will.i.am moodboard certainly inspires guests to feel as carefree as Huckleberry Finn: rough-wood finishes, homespun fabrics, woodburners and (this is Soho House after all) bath tubs on the balcony, with modesty curtains. This farmyard has fire pits and fancy sofas, the Main Barn is cavernous, with vast steel-framed windows, a statement bar, low-slung Chesterfields and an atmosphere other hoteliers wish they could bottle. There’s a 25-metre beauty of an infinity pool cantilevered over a lake, fabulous Japanese cooking at Pen Yen as well as Soho House’s winning comfort food, and the chance to witness grown-ups giggling like kids as they wobble about on Foffa bikes, the preferred mode of transport. Of course, it’s all about the little touches: the barman in the roaming milk float who fixes doorstep G&Ts; the vase of wildflowers from the room carefully stowed in the boot of your car with your cases as a goodbye keepsake. This isn’t your typical farm. It’s owned by Eleven Experience, the Colorado-based high-end adventure-travel outfit that is one of the most interesting of its kind in the world right now. It has two helipads, an indoor-outdoor, swim-through geo-thermally heated pool, a bar with a pool table and drumkit, and a dining room with floor-to-ceiling windows, modern art and sweeping views. In fact, there’s really nothing typical about Deplar, among the mountains on Iceland’s remote Troll Peninsula, a place of severe beauty. It’s got some of the best heli-skiing and fishing right at its doorstep. You can roll out of bed and chopper up to the top of a snow-covered volcano which, in all likelihood, no one has ever skied before, zipping through fields dotted with tiny horses that look like toys and finishing your run on the Arctic beach, where, if you do not mind the chill, you can simply kick off your skis and go fishing (then hightail it to the spa to recuperate in a flotation pod). It’s the sort of trip that confers bragging rights back home, from a company that understands such hyper-adventurous yet modern-luxe impulses perfectly. It has an expanding empire of properties and boats in North America, the Caribbean and Europe devoted to these fast/slow, winter/summer outdoorsy pursuits. But Deplar Farm is a standout. The air is pure, the snow powdery and in the summertime the salmon-rich rivers flow clear, fast and free. By Steve King
Casa Tua isn't the most obvious choice for a hotel in Miami - it's not beachfront and it lacks the city's signature Art Deco style - but that's pretty much the point. There's something wonderfully idiosyncratic about this red-roofed, Mediterranean-style villa, an appeal that draws the likes of Jennifer Lopez and Kate Hudson. While the rest of South Beach is all splash factor and excitable Kardashian clones, this place remains as peaceful and detached as a Tuscan hideaway. With their big marble bathrooms, overstuffed sofas and canopy beds, the five all-white suites manage to feel both homely and luxurious. But there can be little doubt that the downstairs restaurant is the biggest draw, with a fabulous courtyard lit by dozens of antique lanterns and a living room-like interior filled with framed black-and-white photos. The food fits in perfectly with this smart but homespun vibe: seared seabass with olives, tomatoes, artichokes and asparagus; tiramisu for pudding. Casa Tua doesn't have a pool, but it's possible to book a spot at the Delano hotel's beach, a block and a half away.

On paper it shouldn’t work. An entire Puglian village, built from scratch. A reimagining of townhouses and a square, a colonnade of shops, villas dotted around the grounds, a little farm area with horses and chickens and rabbits. How could it possibly be anything other than pastiche? And yet… at the grand old age of 10, Borgo Egnazia has carved a name for itself as one of the loveliest places to stay in all of Italy. It is dreamily beautiful, the way the harsh Mediterranean sun hits the mellow tufu limestone from which the buildings have been honed, the shock of bougainvillea that has crept up every wall, the softness, the shadows, the dusky lanes between the hotel rooms. It is of course a hotel, but feels far from formulaic. Rooms are soaring and elegant, cool stone underfoot, mini posies of dried lavender on shelves, huge linen cushions and sun-trap terraces. They are retreats in themselves, some with their own little kitchens, others with swimming pools, or sea views from the rooftops. The restaurants are smart, with the most covetable traditional Italian splatterware plates and bowls, and food made straight from the fields you see around you: broccoli, tomatoes, aubergines, pasta made with the local semolina flour, very good olive oil. There is the sweetest children’s club you’ll ever stumble across, and a supremely cool beach hangout, and a spa that is mesmerising and magical. When Indian hotels do opulent, they really do opulent. And every inch of this palatial spot in the calm, tree-lined boulevards of Delhi’s Diplomatic Enclave is gilded, mirrored, plumped, embroidered and topped with not-a-petal-out-of-place flower arrangements (14,000 blooms are delivered daily). But while it channels the vibe of the grand residence of a globetrotting Maharaja – huge Murano chandeliers from Venice, hand-woven carpets from Turkey, intricate Rajasthani miniature paintings, sandstone elephant statues carved in Qatar (no wonder if cost hundreds of millions to build) – it was actually all brand spanking new when it opened in 2011, so also has a stealthy undercurrent of techie and green credentials. The 260 gold-hued rooms and suites are some of the largest in the city, treatments at ESPA spa draw on India’s ancient Ayurvedic traditions and the whole hotel is stuffed with so much contemporary Indian art that there’s a dedicated guided walk to take it all in, past Seema Kohli’s layered storytelling canvases, Satish Gupta’s lotus murals and Laxma Goud’s bronzes. An army of ultra-attentive staff fall over themselves to open doors, take bags and present garlands. And at the restaurants (there are four, and two bars), the menus are equally extravagant: hand-cut black truffle fettuccine in black truffle sauce at Italian Le Cirque; lobster nerulli curry at Indian Jamavar; sashimi made with cuts direct from Tokyo’s Tsukiji fish market at Japanese Megu. It’s not a Rorschach test. Don’t dwell too long on Brazilian architect Ruy Ohtake’s uncommon structure sitting on a grassy patch in São Paulo’s refined Jardim Paulista neighbourhood. Is it a watermelon slice? An ocean liner? Step inside the gargantuan belly of a sunlit lobby, then spread out on one of the International Klein blue cushion couches to imbibe a glass of Champagne. More liquid satisfaction is found along The Wall, the lobby bar with its 60ft high stash of spirits (for bibliophiles, 300-plus titles hide alongside). Guests are sent on a sensory adventure, from the unlit lift and barely illuminated corridor to 95 white-on-white cabin-like guestrooms, where an oversized porthole window continues to play with a sense of scale even as an abundance of natural light flows through (highly effective blackout panels close it at the touch of a button). Most fun are those rooms running along the building’s elongated curve, featuring floors that could almost double as a skateboard park. Surround-sound speakers are hidden in headboards, and in the see-through bathroom is a tub with whirlpool jets; less hi-tech but highly coveted are the complimentary Havaiana flip-flops in the closet. Save your appetite for the plump pink salmon sashimi, spicy Amazonian cassoulet and Portuguese arroz de pato (duck rice) at Dijon-born chef Emmanuel Bassoleil’s rooftop Skye restaurant with its 360-degree metropolitan panorama and ruby-red lacquered swimming pool. You’re unlikely to meet a milder, more softly spoken gentleman than Michel Reybier, owner of the La Réserve portfolio of properties. Yet if his hotels are anything to go by, it’s safe to say that passions of Byronic intensity rage beneath his soberly suited breast. Consider La Réserve Paris, the most beloved address in the French capital for fashion editors and the go-to for regular visitors to the city who want to feel like they’re staying in a private mansion. It has only 40 rooms in a fine hôtel particulier designed by Baron Haussmann for Napoleon III’s half-brother the Duc de Morny in 1854. Its position, on a quiet, tree-lined street moments from the Place de la Concorde, is propitious. Then you cross the threshold and – ka-boom! – it’s an explosion of colour and texture in the best way imaginable. There’s brocade taffeta, velvet drapes and silk wallpapers in the richest shades of emerald and ruby. No crevice has gone ungilded. The very walls inside the lifts are covered in cuir de Cordoue so supple you’ll have to resist the urge to place your cheek against it. The views and sense of space are staggering (larger suites face the Grand Palais and the Eiffel Tower) but Reybier, stealthy sybarite that he is, has ensured that even the smaller courtyard-facing rooms are no less sumptuous. They, too, come amply stocked with choice vintages of Château Cos d’Estournel. It so happens that Reybier owns that great Bordeaux estate as well. Try it. This legendary hotel on Manhattan's Upper East Side has a highly developed sense of noblesse oblige. The Carlyle opened inauspiciously in 1930, the year after the Wall Street Crash, and its lobby retains the original black-and-white tiled floor designed by Dorothy Draper. The lift operator knows each guest's name and room number, handy should you return late and a little squiffy. And each room has a proper key: no troublesome cards or spooky 'iris recognition' here. The bedrooms themselves are generously sized - at least for New York - while the tower suites are positively vast and very beautiful, with pale beechwood parquet floors, Chinese cabinets, onyx lamps and silk-cushioned fauteuils, as well as heart-stopping views of Central Park. Refreshment is never far away: tea is served in the Ottoman-styled Gallery, cocktails in the Bemelmans Bar (the bar of the Upper East Side) and lunch or dinner in the Carlyle Restaurant, which is decorous without being sedate. And music is inherent at the Carlyle, whose first tenant was composer Richard Rodgers. In its public rooms and suites there are 14 baby grand pianos, and Woody Allen still plays jazz clarinet every Monday night, six months of the year, at the ground-floor Café Carlyle.
