Often referred to as the USA's best small hotel, this 20-suite Relais & Châteaux property - with cottages and outbuildings anchored by a 1795 New England farmhouse - sits in 300 acres of breathtaking wildflower meadows, pine forests, lakes and orchards. Its sophisticated style is the result of a long and fruitful relationship with the cream of NYC's interior-design world. In the 1990s, the original owner, Hawaiian newspaperman Thurston Twigg-Smith, commissioned designer and one-time Warhol apostle Jed Johnson to work his magic on the first 15 rooms. Cue chinoiserie toile pelmets, hand-carved ravens atop barley-twist bedposts and a trompe-l'oeil tented ceiling. Johnson's rooms are still marvellous, but when Twin Farms added another five bedrooms in 2005, plus spa treatment rooms, architect Peter Bohlin (known for his Apple stores) and interior designer Thad Hayes were called in. Their suites - such as The Aviary, with its Douglas-fir panelling, shag rug and buttoned-leather headboard, all in orange - are as luxurious as Johnson's, though less zesty. As delightful as the rooms are, the farm-raised, seasonal food (veal with butternut-squash purée in winter, grilled halibut and prawn gnocchi in summer) from chef Ted Ask and pastry honcho Christopher Wilson possibly tops it all. There's also access to deserted hiking trails, private ski slopes, fly-fishing, the Out of the Woods Spa and a 20,000-bottle wine cellar.
This pioneering camp of 10 elegant, khaki-green Rajasthani tents marooned on a grassy island on the edge of the Makgadikgadi salt pans has remained a standout hit for years. Here the intermittent rustling of the mokolwane palm trees is often the only sound breaking the utter silence. Lunar-like, the pans stretch for thousands of kilometres in all directions and are littered with fossils and Stone Age artefacts. Founded by fifth-generation safari operator, explorer and naturalist Ralph Bousfield, in memory of his crocodile-hunting late father Jack, the camp is a place to be adventurous and also educated. The guides are all long-standing experts in their fields, from zoology to palaeontology, and walkabouts are led by a resident bushmen clan. Jack’s is big on the classic, old-school East African safari experience, with Persian rugs, paraffin lanterns, brass fittings, mahogany campaign furniture, antique four-poster beds and raucous, communal dining in a mess tent. But it’s the choice of experiences, some dictated by the dramatic seasonal changes to the landscape, that ultimately thrill the most. In the dry season, meerkats and brown hyena are the unlikely stars of the show and zooming across the pans on quad bikes is obligatory. After the summer rains, lush grasses attract migrating herds of zebra and flamingos in their thousands. At any time of the year, it’s a photographer’s dream. Felicité, the fifth-biggest island in the Seychelles, is widely considered to be one of its most beautiful. Giant granite boulders lie scattered atop curvaceous hills like remnants of a gods’ pétanque match. Blue pigeons coo and roost in jungly vegetation. The sand is so powdery and pristine that it squeaks as you scuttle into the clear aquamarine shallows. And within all this almost-otherworldly natural splendour is a man-made retreat that is almost as pretty – and equally as green (how many other islands have solar-power panels, a reverse-osmosis plant and a patch of land for an organic kitchen garden?). The 30 glass-fronted rooms are set among boulders and trees, with wide decks and plunge pools outside, and polished wooden floors and furnishings in the hues of the sea inside. At the beach bar, giant hammocks are strung over the ocean from which to sip passionfruit Mojitos and mango ice-lollies. At breakfast, there are green smoothies, rainbow-coloured fruit platters and oysters; at night it’s French Champagne and fire-cooked lobster, followed by rum tastings in a cosy bar. In between all this taste-bud tantalising, there are hills to hike, reefs to dive around and palm trees to lie under and contemplate the delightful symmetry of a crab’s tracks or the puffiness of a cloud. This meticulously resorted Victorian manse set on 34 acres of Scottish woodlands first made headlines in 2014, when it was acquired by none other than tennis star Andy Murray, who hails from this part of Perthshire. Yet you'll find almost no trace of the pro here other than his fondness for this nook of the Highlands. Famed French chef Albert Roux runs the kitchen at Chez Roux at Cromlix, offering up elegant French-meets-Scottish food. On paper it shouldn’t work. An entire Puglian village, built from scratch. A reimagining of townhouses and a square, a colonnade of shops, villas dotted around the grounds, a little farm area with horses and chickens and rabbits. How could it possibly be anything other than pastiche? And yet… at the grand old age of 10, Borgo Egnazia has carved a name for itself as one of the loveliest places to stay in all of Italy. It is dreamily beautiful, the way the harsh Mediterranean sun hits the mellow tufu limestone from which the buildings have been honed, the shock of bougainvillea that has crept up every wall, the softness, the shadows, the dusky lanes between the hotel rooms. It is of course a hotel, but feels far from formulaic. Rooms are soaring and elegant, cool stone underfoot, mini posies of dried lavender on shelves, huge linen cushions and sun-trap terraces. They are retreats in themselves, some with their own little kitchens, others with swimming pools, or sea views from the rooftops. The restaurants are smart, with the most covetable traditional Italian splatterware plates and bowls, and food made straight from the fields you see around you: broccoli, tomatoes, aubergines, pasta made with the local semolina flour, very good olive oil. There is the sweetest children’s club you’ll ever stumble across, and a supremely cool beach hangout, and a spa that is mesmerising and magical. Surrounded by the stark beauty of the southern Utah desert, this thrilling nexus of design and location has yet to be outshone by any other hotel in the USA. From a distance, it looks like a nuclear bunker; inside, it's all austere grandeur, concrete and glass, iron and wood, soaring space and dancing sunlight. In the main building, floor-to-ceiling windows give CinemaScope views of the desert and very cool pool; loungers are shaded by flowering cherry trees, of all unexpected things. The open kitchen with its wood-burning stove is here, and an indoor-outdoor restaurant and library. Insane prices rather squelch the appeal of the splendid spa, but the 34 rooms could make anyone grin: softest Beltrami linen, spotlit art in the loo, a free minibar (non-alcoholic drinks only, but addictive salted caramel popcorn) plus those devastating desert views from the bed, bath, twin showers and terrace. Most amazing, though, are the huge pool suites. The (mostly Mormon) staff will make up a daybed on the sky terrace for guests to sleep out beneath the stars. Excellent guides include geologists, archaeologists and an ex-Marine naturalist, and there are two daily hikes for spotting coyote, cougar, jackrabbits and deer mice. Food could be simpler and arrive sooner, but the bison steaks are perfect. And from November to March, meals are included in the room rate.

The ancient lava fields and low-lying scrub of the surrounding area make it feel more like Namibia than Hawaii. But as soon as driver pulls off Queen Ka’ahumanu Highway onto a private lane and the landscape shifts from Martian to tropical – lush with palms, canary-yellow hibiscus and musk ferns – and you inhale the plumeria-infused cold towel, bowing to receive the simple kukui nut lei, you know exactly where you are. Creating this distinct sense of place without employing gimmicky tropes (all too easy to do in a place like Hawaii where a little puka shell goes a long way) is what makes Hualalai stand out on an island of upscale hotels. The Hawaii-ana is restrained – hand-woven palm mats, tropical wallpaper in neutral tones – and the buildings are modelled on classic architecture that really pushes the indoor-outdoor living. The soaring lobby opens onto teak lanais overlooking the secluded stretch of coastline, miles from touristy Kona to the south and the resort village of Waikoloa to the north. Authenticity shines through, too, in the way this place interacts with its environment; for example, rather than clearing the hardened lava from various eruptions, Four Seasons used traditional hand-stacking techniques to build walls, stocked the King Pond with injured rescue fish from the ocean, and implemented a commercial fishing ban to allow the depleted waters in front of the property to recover. And the staff emit the characteristically chill aloha spirit while being super-attentive to the overworked tech couple from Silicon Valley and the stylish family of five escaping an endless New York winter.
