By the utterly enormous pool, a flurry of bow-tied waiters rush between the Brits and French and, with increasing frequency, Russians and Turks, lying about all day long, with bottles of Moroccan rosé and surprisingly well-mixed Old Fashioneds, moving equally as swiftly between the languages. In the incredible bedrooms, the sweeping Moorish curves on the balcony doors are emulated in the archway to the bathrooms, themselves a symphony of tilework and gold-framed mirrors. Manhattan? Like, so over. Food, fashion, music, art - it's all happening over the East River in Brooklyn. Of the clutch of hotels that have followed the wave, the 70-room Wythe, which opened in 2012, is the clear winner. This converted barrel factory is in Williamsburg, a five-minute subway ride from the island, and a hotbed of bars, restaurants and shops (Pies 'n' Thighs for Southern grub, Catbird for quirky jewellery). Owners Jed Walentas - scion of the New York real-estate family - Australian hotelier Peter Lawrence and Andrew Tarlow, who runs Brooklyn restaurants Diner and Marlow & Sons, have kept things industrial inside, with exposed brick, mosaic and tiled floors, and beamed ceilings. Bedrooms are particularly minimalist, with polished concrete floors, king-size beds and Manhattan views from floor-to-ceiling windows in west-facing rooms. There's even a thwack of skyline from the little window in the walk-in shower. The hotel's rooftop bar, The Ides, does great cocktails and is a raucous spot in summer, but it's the ground-floor restaurant, Reynard, that is a must for its super-fresh, veg-laden dishes including fluke crudo with fennel and caraway, and grass-fed steak with beets, goat's cheese and watercress. The hotel has no gym of its own, but guests are given a pass to Chalk down the road, a haunt for bench-pressing local hipsters.
The building’s textile-clad façade and verdant latticework by Japanese architect Kengo Kuma creates a palpable sense of calm – ideal for meditating on the deeper cultural meaning behind contemporary Chinese artworks in the atrium, such as Beijing Memory No. 1 and No. 2, Li Xiaofeng’s wearable cheongsam and military breastplate covered in Ming and Qing-dynasty porcelain shards, and ceramicist Fiona Wong’s ghostly, lace-like White Wings. There’s also a 20ft-high Chinese apothecary chest of 6,000 drawers in the lobby, and the multilingual staff shuffling around in all-black outfits further add to the art-gallery vibe. More straightforward are the 99 open-plan guestrooms finished in oak wood and Turkish sandstone, with Japanese-style furo soaking tubs and powerful overhead rain showers. The complimentary ‘maxi-bar’ features craft brews from the nearby Arrow Factory and bottles of orange-flavoured Arctic Ocean soda, the nectar of any Beijing childhood. A decade after the hotel opened, the Sanlitun area surrounding the House has blossomed. Cross the street to Dover Street Market, where you’re likely to spy staff nipping out to pick up niche items at pop-up events. Follow the scent of date wood back to the hotel’s Jing Yaa Tang restaurant: cumin-laced lamb skewer and fiery kung pao chicken from a cage-free farm south of Beijing deliver just the right amount of anticipation while the master roaster glazes your duck with his secret combination of osmanthus, honey, vinegar, molasses and crushed dates. Order an Old Peking as nightcap, made with Diplomático Reserva Exclusiva rum, Mancino Vecchio vermouth and finished in a cloud of date wood smoke – the only type used by serious Beijing duck roasters. At first sight, Tetiaroa looks like a trick of the light, almost an aberration: it has a sci-fi glow. A pale blue of such luminosity, the remote, entirely private French Polynesian atoll’s water can be seen from outer space – astronauts orbiting the earth have enquired what it was. You leave from Tahiti (30 miles away, but it might be 3,000) and descend in a private six-seater directly into the Technicolor incandescence: a four-and-a-half-mile lagoon surrounded by a subterranean wall of living coral reef and circled by 12 cute green islands. Just one is used for the hotel’s 35 villas, the others solely occupied by frigate birds and ancient pandanus trees and honey bees. Tahitian royalty once lived here through the summers, prettifying their daughters for marriage, feeding them giant sea snails and sweet potato. All the islands are hemmed by white sand and shallow water rippling with baby fish. In deeper water are coral cathedrals for giant clams with mouths full of an algae in a trippy neon. The one-, two- and three-bedroom villas are decidedly more lustrous than the usual desert-island design in glass and ironwood, slate and silk. Each is set super-secretively in its own grounds, with a stretch of lonely white sand backed by dense trees. Your lazy eyes catch the occasional bright jags of oleander, jasmine, hibiscus and golden trumpet. Some guests stay put; some congregate at Bob’s Bar by the lodge’s restaurants (there are three, including a tiny new Japanese) and talk about the actor Marlon Brando, who bought Tetiaroa in 1967, having sailed past whilst scouting for locations for Mutiny on the Bounty (he even helped to develop the innovative 100 per cent renewable-energy seawater air-conditioning system here). A species of tilapia in the natural pond near the spa likes to gobble mosquito larvae: you won’t be bitten here. Best are the late afternoons, with the lulling sound of the Pacific crashing against the distant reef, waiting for the dusk, when the sky turns through the softest pastels into a stupefying heliconia red. Strolling into this hotel is a rich sensory experience unlike any other in town. The atrium is filled with a dozen ficus trees wrapped in delicate white lights and dotted with lavish ‘Are they real?’ floral arrangements. The answer is, of course. Since opening in 2005, Wynn has remained the high-rolling kingpin of Sin City names, partly because of its money-no-problem approach to design and services, but also because it likes to poach big spenders – as well as newly minted winners on the casino floor. There are nearly 40 designer shops (including two Chanel stores) spread throughout three shopping hubs, the newest of which, Wynn Plaza, just opened this autumn with a Cipriani restaurant and a SoulCycle outpost. Elsewhere, there’s a multiplicity of restaurants, nightclubs, a beach club, pools, spas and bars (our personal tip is the pretty Parasol Down for its fanciful cocktails and waterfall views). Rumour has it the cost to maintain the floral displays at Wynn and its sister tower, Encore, is in the millions. But not everything is gilded fantasy here. Wynn recently opened its own solar field, which offsets up to three-quarters of its energy usage, and every restaurant has a vegan or vegetarian menu. A golf course designed by Tom Fazio will open at the end of the year. The Strip has no shortage of hotels, but despite its size, the Wynn manages to feel intimate and draws a clued-up international crowd who appreciate a player with style. By Juliana Shallcross
After three decades, this wine-country pioneer, balanced on a hillside overlooking Napa Valley, remains a favourite. Even for jaded souls who think they've seen it all, the light-filled rooms - just 52 of them, mostly intimate, Mediterranean-style stucco cottages - are a delight. With French doors, private terraces and fireplaces, they're designed for comfort, privacy and relaxation. An olive grove shades the grounds, and a large sculpture garden makes for a pleasant walk to and from the main house, pool and Michelin-starred restaurant. Dinner on the patio is a must: choose from chef Robert Curry's seasonal menu - the excellent roast pork belly, kampachi sashimi and seared tuna with fava purée are standouts - and say yes to head sommelier Kris Margerum's thoughtful wine pairing. The massive spa has a central courtyard lined by hammam-style sauna and steam rooms, outdoor showers and hot and cold plunge pools. A leisurely afternoon here is a treat, not least because of the sunshine-soaked views.

Housed in a handsome, 19th-century townhouse in the Gothic Quarter that once belonged to the wealthy Mandri family, it is bursting with original details rescued by architect Hector Restrepo Calvo and given new life by the in-house design team: modernist hydraulic tiles and polished parquet floors; vaulted red-brick ceilings hung with brass petal lanterns like something from a Gaudí-inspired fantasy. But the details couldn’t be more English – hot-water bottles in cable-knitted cosies in the bed-side cabinet, Burleigh porcelain for a proper cup of tea, chintzy velvet sofas to sink into – combined with carefully considered touches such as the ready-mixed Negronis in the mini-bar. The gym is so bright and lovely you might actually use it, the Cowshed spa is a spoiling urban retreat and travellers who love a quiet night can hunker down in the 36-seat, racing-green cinema. The whole place buzzes, day and night, as the city’s movers and shakers linger over coffee while scrolling through their social-media accounts, or sip Lady A rosé and eat sweets from a free giant dispenser. Right on Xpu-ha beach, the best stretch of white sands on this part of the Caribbean coast, Esencia is one of those hotels that is spoken about in hushed tones by those in the know, none of who want to let this secret get out. But those who do make it here discover a small, natural beauty of place set on a palm-swaying estate on the edge of the tumbling sea. Often referred to as the USA's best small hotel, this 20-suite Relais & Châteaux property - with cottages and outbuildings anchored by a 1795 New England farmhouse - sits in 300 acres of breathtaking wildflower meadows, pine forests, lakes and orchards. Its sophisticated style is the result of a long and fruitful relationship with the cream of NYC's interior-design world. In the 1990s, the original owner, Hawaiian newspaperman Thurston Twigg-Smith, commissioned designer and one-time Warhol apostle Jed Johnson to work his magic on the first 15 rooms. Cue chinoiserie toile pelmets, hand-carved ravens atop barley-twist bedposts and a trompe-l'oeil tented ceiling. Johnson's rooms are still marvellous, but when Twin Farms added another five bedrooms in 2005, plus spa treatment rooms, architect Peter Bohlin (known for his Apple stores) and interior designer Thad Hayes were called in. Their suites - such as The Aviary, with its Douglas-fir panelling, shag rug and buttoned-leather headboard, all in orange - are as luxurious as Johnson's, though less zesty. As delightful as the rooms are, the farm-raised, seasonal food (veal with butternut-squash purée in winter, grilled halibut and prawn gnocchi in summer) from chef Ted Ask and pastry honcho Christopher Wilson possibly tops it all. There's also access to deserted hiking trails, private ski slopes, fly-fishing, the Out of the Woods Spa and a 20,000-bottle wine cellar.
The sister property of The Cloister caters well to the golf crowd: the Lodge’s 40 rooms overlook two legendary golf courses, Plantation and Seaside, and sit near the 18-hole Retreat course, co-designed by David Love III. This will stop even island regulars in their tracks: on the way to breakfast when they see baby sharks swimming right there in the shallows; passing the giant, gnarling, Tomb Raider-esque banyan tree near the tucked-away spa; at sunset when the pool becomes a mirror for the sky and the only colours that exist in the world are orange and blue. Amilla is a minimalist and clean-lined version of the Maldives, with low-rise buildings in a white wood the same shade as the flour-fine sand. Nothing pokes above the palm trees, even the treehouses high up in the canopy (for those who prefer to fall asleep to the sound of birdcall rather than waves) cleverly blend into their surroundings. Being in or near the water is what it’s all about: the snorkelling is sensational and the house reef is home to a coral-lined underwater chimney where hawksbill turtles, triggerfish and guitar sharks schmooze. But there’s also a knockout spa where trainers from hit London outfit Bodyism lead guests through a gym session to get hearts racing and then brilliant therapists from Bhutan calm them back down again. All is mellow and fairy-lit when it gets dark and everyone seems to be wearing something floaty. 'If we want things to stay as they are,' Giuseppe Tomasi di Lampedusa famously wrote, 'things will have to change.' Anyone who knows and loves The Carlyle will want things at this Upper East Side institution to stay as they are, while also understanding that a certain amount of tweaking is, alas, necessary. Designer Tony Chi, who did such a fine job at The Carlyle’s sister property, Rosewood London, is currently overhauling 80 percent of the hotel’s 190 rooms. The first of these will become available in early 2019. Renovations here have always been a fraught business, not least because, as well as being a hotel, it also contains 50 or so privately owned apartments spread across its 35 floors, making it impossible to do the whole place up all at once. Thus some rooms are florid and chintzy; some are 1920s time capsules; some are slick and steely; and still others are something in between. Broadly speaking, they get better the higher the floor. Plus, you get to spend more time in the elevators —not an activity to enjoy in everyday life, but this is not everyday life. The ones at The Carlyle are the stuff of legend, as much admired as the astounding Dorothy Draper lobby or Bemelmans Bar. Imagine if you had been there when Princess Diana, Michael Jackson, and Steve Jobs all piled in (true story). You would have been in awe. Not of them, of course, but of the real superstar – the unflappable, icy-calm, white-gloved Carlyle elevator operator. By Steve King
