Often referred to as the USA's best small hotel, this 20-suite Relais & Châteaux property - with cottages and outbuildings anchored by a 1795 New England farmhouse - sits in 300 acres of breathtaking wildflower meadows, pine forests, lakes and orchards. Its sophisticated style is the result of a long and fruitful relationship with the cream of NYC's interior-design world. In the 1990s, the original owner, Hawaiian newspaperman Thurston Twigg-Smith, commissioned designer and one-time Warhol apostle Jed Johnson to work his magic on the first 15 rooms. Cue chinoiserie toile pelmets, hand-carved ravens atop barley-twist bedposts and a trompe-l'oeil tented ceiling. Johnson's rooms are still marvellous, but when Twin Farms added another five bedrooms in 2005, plus spa treatment rooms, architect Peter Bohlin (known for his Apple stores) and interior designer Thad Hayes were called in. Their suites - such as The Aviary, with its Douglas-fir panelling, shag rug and buttoned-leather headboard, all in orange - are as luxurious as Johnson's, though less zesty. As delightful as the rooms are, the farm-raised, seasonal food (veal with butternut-squash purée in winter, grilled halibut and prawn gnocchi in summer) from chef Ted Ask and pastry honcho Christopher Wilson possibly tops it all. There's also access to deserted hiking trails, private ski slopes, fly-fishing, the Out of the Woods Spa and a 20,000-bottle wine cellar.

This will stop even island regulars in their tracks: on the way to breakfast when they see baby sharks swimming right there in the shallows; passing the giant, gnarling, Tomb Raider-esque banyan tree near the tucked-away spa; at sunset when the pool becomes a mirror for the sky and the only colours that exist in the world are orange and blue. Amilla is a minimalist and clean-lined version of the Maldives, with low-rise buildings in a white wood the same shade as the flour-fine sand. Nothing pokes above the palm trees, even the treehouses high up in the canopy (for those who prefer to fall asleep to the sound of birdcall rather than waves) cleverly blend into their surroundings. Being in or near the water is what it’s all about: the snorkelling is sensational and the house reef is home to a coral-lined underwater chimney where hawksbill turtles, triggerfish and guitar sharks schmooze. But there’s also a knockout spa where trainers from hit London outfit Bodyism lead guests through a gym session to get hearts racing and then brilliant therapists from Bhutan calm them back down again. All is mellow and fairy-lit when it gets dark and everyone seems to be wearing something floaty. Among the half dozen restaurants, Japanese Feeling Koi, set right out over the ocean, is a highlight: reef-fish ceviche with pomegranate; crispy crab roll with green-tea powder. Manhattan? Like, so over. Food, fashion, music, art - it's all happening over the East River in Brooklyn. Of the clutch of hotels that have followed the wave, the 70-room Wythe, which opened in 2012, is the clear winner. This converted barrel factory is in Williamsburg, a five-minute subway ride from the island, and a hotbed of bars, restaurants and shops (Pies 'n' Thighs for Southern grub, Catbird for quirky jewellery). Owners Jed Walentas - scion of the New York real-estate family - Australian hotelier Peter Lawrence and Andrew Tarlow, who runs Brooklyn restaurants Diner and Marlow & Sons, have kept things industrial inside, with exposed brick, mosaic and tiled floors, and beamed ceilings. Bedrooms are particularly minimalist, with polished concrete floors, king-size beds and Manhattan views from floor-to-ceiling windows in west-facing rooms. There's even a thwack of skyline from the little window in the walk-in shower. The hotel's rooftop bar, The Ides, does great cocktails and is a raucous spot in summer, but it's the ground-floor restaurant, Reynard, that is a must for its super-fresh, veg-laden dishes including fluke crudo with fennel and caraway, and grass-fed steak with beets, goat's cheese and watercress. The hotel has no gym of its own, but guests are given a pass to Chalk down the road, a haunt for bench-pressing local hipsters.

With a flotilla of boldfaced big-hitters hugging its sunny shores, Dubai isn’t exactly short of luxury digs. But what makes the newly opened Bulgari stand out is its location on its own seahorse-shaped manmade island, and its low-slung layout, a pleasing retort to the city’s ubiquitous canyons of skyscrapers. This is down to the group’s Milan-based architects, who anchored the hotel so it separates two bays: one an oh-so-quiet stretch of beach lined with villas; the other a super-smart marina with a sweep of restaurants and the Bulgari Yacht Club – a first for the brand. Structures are topped with layers of coral-like latticework; other marvellous textures that draw the eye include backlit green onyx, black granite and woollen Beni Ourain rugs from Morocco, picked out with covetable objects from B&B Italia and Flos. The city centre thrums on the other side of a 300-metre bridge, but with six bars and restaurants at the hotel, there really is no reason to cross it. La Spiaggia is a poolside crowd-pleaser that flips out wagyu beef burgers during the day, while in the evening, a Negroni from the oval Bulgari bar is a punchy aperitif for oysters and bottarga risotto at the neighbouring Niko Romito restaurant. The wow factor, though, is provided by the immense spa, with its ice fountains, hammam and an indoor pool – lined with a mosaic of real gold tiles, naturally – that has far-reaching views of the sea and the Dubai cityscape through floor-to-ceiling windows. This elegant Art Deco tower piercing the blue Californian skies on Sunset Boulevard has long been a landmark of the city, home to Hollywood greats since its arrival in 1931, courtesy of architect Leland A Bryant. In those days it was Clark Gable and Greta Garbo, Frank Sinatra and Ava Gardner – and John Wayne, who apparently kept a cow on his balcony to ensure fresh milk for his coffee. Now it’s shiny again after a multi-million-dollar renovation, and 21st-century stars are coming here just for a night or to grab a drink in the see-and-be-seen Tower Bar on the notorious Sunset Strip. No photographs. No phone calls – it says on the bottom of the menu firmly while maître d’ Gabé Doppelt discreetly juggles regular guests such as Jennifer Aniston with those who prefer dim lighting or need private corners for tête-à-têtes. The spicy tuna tartare is nearly everyone’s favourite; the seared scallops with black leek and truffle sauce a close second. The 81 bedrooms are done up in dusty pinks and browns with dazzling bathrooms clad in metallic gold wallpaper designed by fashion illustrator Donald Robertson, and there’s a Joanna Vargas spa for those red-carpet moments. The newly refreshed outdoor terrace overlooking the small but beautiful pool is one of the loveliest spots – in a city with a strong alfresco game – for a breakfast of mashed avocado on sourdough with poached eggs, or simply to relax for an hour or so, taking in the spectacular views of LA and basking in that brilliant golden sunshine. Long before the influx of American billionaires preparing for the apocalypse by constructing mega-million-dollar retreats in the remotest reaches of New Zealand, there was the Lodge at Kauri Cliffs. American hedge-fund billionaire Julian Robertson created this hotel on a 6,000-acre working sheep farm set above the Pacific Ocean. For golfers, it offers the round of a lifetime. Created by late, great course designer, David Harmon, 15 of the 18 holes look out across the ocean, while six play alongside cliffs which drop 200 metres into the sea. Tee-offs require blind hits of faith across coastal chasms. But Robertson’s vision was hardly limited to golfers. There’s a day spa built within a native forest, and sunset barbecues on Friday evenings on the property’s pink-sand beach; more formal suppers are served inside the main lodge, which is designed to feel like a traditional farmhouse (albeit one which requires guests wear jackets for dinner). A farm-to-table ethos rules the kitchen, fresh produce from the sea and surrounding farms dictates daily changes to a menu regarded as northern New Zealand’s finest. Spacious rooms are neutral-toned and comfortable – fancy elements would be negated by the elevated views out to the Cavalli Islands. Those seeking even more space should try the 4,200-square-feet Owner’s Cottage, and then wander around the property, through ancient Kauri woodland, and down trails onto deserted white-sand bays where orcas and whales pass by. This 21-room mansion-turned-hotel was the survey’s No. 1 winner among small city hotels, and it embodies that time-machine charm of the Holy City: fireplaces in every room, hors d’oeuvres and sherry in the lobby, and chocolate truffles on your pillow at bedtime. With so many seductive treats, readers also awarded the Second-Empire-style hotel a high ranking for romance. Meanwhile, with Southern-meets-global dishes like antelope country paté, cast-iron poulet rouge and sweet potato doughnuts, the on-site Circa 1886 restaurant helped the Wentworth win the gold medal for small-city hotel dining.
There’s a bit of an 'Alice in Wonderland' feel to the Faena, and this carries through into the rooms—particularly with the smaller accents and pieces of furniture you’ll find yourself “discovering” as your stay progresses. Outside, the hotel makes the most of its 100,000 square feet of private white-sand beach, and if you find yourself asking, "Did I just see a golden woolly mammath skeleton in a glass cage?" the answer is yes—you can thank artist Damien Hirst for that one.
Enter the polished marble hall, take in the view down the Grande Allée that bisects its gardens, scented with the roses they cut to decorate the bedrooms and cooled by what F Scott Fitzgerald called its ‘deferential palms'. The Mediterranean lies beyond, and your spirits cannot but soar. Can there be a lovelier place for breakfast than the terrace of its mansion-like main building, all pale pink stucco, slate mansard roofs and oeil-de-boeuf windows? Or a more flirtatious spot for a coupe de Champagne than the starlit, ocean-liner-like roof terrace of the waterside Eden-Roc restaurant? Or a smarter arena in which to show off your trapeze skills than the swings, rings and rope ladders suspended over the sea, just beyond the heated saltwater swimming pool? Its chintzy bedrooms will never win prizes for innovative design or modernity. There may be Wi-Fi and phones, but a retro panel of bells on the bedside tables still summons your valet, femme d’etage or room service. And yet, in spite of all this – or, more likely, because of it – there’s nowhere else on earth quite like it. Hence the eternal allure that ensures the top-floor rooms of its century-old seaside annexe, Eden-Roc, shielded both from public gaze and waterborne paparazzi, remains the A-list’s lodging of choice during the Cannes Film Festival. Every so often a game changer comes along. Six years later than scheduled, this country-house hotel finally opened in September 2018, an 18th-century manor whose estate is vital to its very core. The land has been enthusiastically pressed back into service – albeit with a new, biodynamic twist – both as bountiful supplier and as a playground for anyone staying here. A river and arboretum planted by 19th-century head gardener William Wildsmith unfold beyond the Georgian pleasure garden, rolling into crop fields and farm pastures which guests are encouraged to explore. There is further acreage inside: a private dining room, drawing and morning rooms, a leather-clad screening room. Designer Ben Thompson’s layering of soft colours, texture and assiduously polished antiques with contemporary craftsmanship has created a refined earthy feel. Of the 45 bedrooms, six are suites, including the bold Ochre Room with its chocolate marble bathroom, the sleek off-white Panelled Room, and the Long Room, with a log fire and its own terrace. Skye Gyngell, formerly of café-turned-Michelin-star-sensation Petersham Nurseries, heads up its two restaurants: Marle and casual, brick-clad Hearth. She brings the farm-to-fork ethos in evidence at her London restaurant Spring but here in her rural domain, the ingredients (peach leaves, perhaps, for subtly flavoured ice cream) can be plucked to order from a walled orchard yards, not counties, away. In the absence of your own stately pile, this estate’s return to authentic, productive life is the closest you can get to lording it up. By Sally Shalam
