The Covent Garden Hotel might sit in the heart of theatre-land, but it’s no drama queen. It lets other divas in town take the curtain calls. Instead, this place goes for the slow burn, revealing itself subtly and demurely. But when it does, you realise it’s a beauty. Take the first-floor Drawing Room, lined in maple wood, shiny as toffee, which originally came from the now demolished League of Nations building near Trafalgar Square. Here too are delicately limbed parlour chairs with 18th-century needlepoint embroidery and a grand old writing desk, inlaid with mother-of-pearl and holding numerous little drawers that surely concealed secret notes over the years. The honesty bar just off the nook of a library is as well stocked as a house party, meaning that nightcaps can be as late as you like. Settle into the yellow and red sofa in front of the log fire, kick off your shoes (it’s not frowned upon) and soak up the elegant yet cosy surroundings. Just as lovely is the fourth-floor Terrace Suite, up among the rooftops and chimneys of London like a Mary Poppins eyrie. Parrots peck at blousy dusty-pink flowers on the linen upholstery of the sofa and over-sized headboard and purple and teal ikat-print curtains frame the windows. In the morning, watch the sunrise over the Shard from the little wooden deck. There’s a deep bathtub for soaking in, and lavender-and-eucalyptus bathroom lotions by RikRak (a bespoke Firmdale range) that smell so good you’ll be sniffing your arm for the rest of the day. Twenty-six years on, Ellerman House is still everybody’s fantasy bolthole in Cape Town: minutes from the best beaches and the Table Mountain cableway, but close enough to the city and its dynamic food, art, and design scene. Sandwiched between Lion’s Head and the Atlantic Ocean, the Cape Edwardian mansion looks like a private residence from the road, one of many overlooking the sea in the wind-protected suburb of Bantry Bay. And that’s exactly what keeps guests coming back. The bar, restaurant, and spa are exclusive to invited and resident guests, which means it’s very private and secure. Owner Paul Harris takes enormous pride in his country—his impressive collection of South African art spans original works from the turn of the last century to current contemporary art. An informal tour of the collection with one of the in-house art experts is a fascinating lesson in the country’s socio-political history. Then there are the 7,500 bottles of rare and vintage South African wines in the cellar, and the indigenous plants sourced from Kirstenbosch (Cape Town’s answer to Kew) in the one-and-a-half acre terraced gardens. Besides the main house, there are two modern, minimalist private villas built into the granite mountainside, as well as a wine gallery and an excellent little spa. Checking into one of the individually decorated rooms in the house—many with local African design elements, some on the small size—feels both comfortable and comforting. As does the open-access kitchen. Walk right in, tell the chefs what you’re craving and it is whipped up in minutes. Better yet, take a snack back to your room. The post-sunset vista from the balcony has to be one of the best views of the Atlantic found anywhere on earth.
Often referred to as the USA's best small hotel, this 20-suite Relais & Châteaux property - with cottages and outbuildings anchored by a 1795 New England farmhouse - sits in 300 acres of breathtaking wildflower meadows, pine forests, lakes and orchards. Its sophisticated style is the result of a long and fruitful relationship with the cream of NYC's interior-design world. In the 1990s, the original owner, Hawaiian newspaperman Thurston Twigg-Smith, commissioned designer and one-time Warhol apostle Jed Johnson to work his magic on the first 15 rooms. Cue chinoiserie toile pelmets, hand-carved ravens atop barley-twist bedposts and a trompe-l'oeil tented ceiling. Johnson's rooms are still marvellous, but when Twin Farms added another five bedrooms in 2005, plus spa treatment rooms, architect Peter Bohlin (known for his Apple stores) and interior designer Thad Hayes were called in. Their suites - such as The Aviary, with its Douglas-fir panelling, shag rug and buttoned-leather headboard, all in orange - are as luxurious as Johnson's, though less zesty. As delightful as the rooms are, the farm-raised, seasonal food (veal with butternut-squash purée in winter, grilled halibut and prawn gnocchi in summer) from chef Ted Ask and pastry honcho Christopher Wilson possibly tops it all. There's also access to deserted hiking trails, private ski slopes, fly-fishing, the Out of the Woods Spa and a 20,000-bottle wine cellar.

Long before the influx of American billionaires preparing for the apocalypse by constructing mega-million-dollar retreats in the remotest reaches of New Zealand, there was the Lodge at Kauri Cliffs. American hedge-fund billionaire Julian Robertson created this hotel on a 6,000-acre working sheep farm set above the Pacific Ocean. For golfers, it offers the round of a lifetime. Created by late, great course designer, David Harmon, 15 of the 18 holes look out across the ocean, while six play alongside cliffs which drop 200 metres into the sea. Tee-offs require blind hits of faith across coastal chasms. But Robertson’s vision was hardly limited to golfers. There’s a day spa built within a native forest, and sunset barbecues on Friday evenings on the property’s pink-sand beach; more formal suppers are served inside the main lodge, which is designed to feel like a traditional farmhouse (albeit one which requires guests wear jackets for dinner). A farm-to-table ethos rules the kitchen, fresh produce from the sea and surrounding farms dictates daily changes to a menu regarded as northern New Zealand’s finest. Spacious rooms are neutral-toned and comfortable – fancy elements would be negated by the elevated views out to the Cavalli Islands. Those seeking even more space should try the 4,200-square-feet Owner’s Cottage, and then wander around the property, through ancient Kauri woodland, and down trails onto deserted white-sand bays where orcas and whales pass by. This was always destined to be the Ferrari of farm holidays, coming as it does from Soho House, which specialises in hotels top-loaded with glamorous naughtiness. Even so founder Nick Jones must be surprised at how enthusiastically his tribe has taken to tractor life. In December 2018, it adds 40 Piglets, dinky billets shaped like pig arcs, and 10 proper rooms built into the walled kitchen garden, to the original 40 clapperboard cabins, set along a river engineered to sashay through the place like a supermodel. The Waltons meets Will.i.am moodboard certainly inspires guests to feel as carefree as Huckleberry Finn: rough-wood finishes, homespun fabrics, woodburners and (this is Soho House after all) bath tubs on the balcony, with modesty curtains. This farmyard has fire pits and fancy sofas, the Main Barn is cavernous, with vast steel-framed windows, a statement bar, low-slung Chesterfields and an atmosphere other hoteliers wish they could bottle. There’s a 25-metre beauty of an infinity pool cantilevered over a lake, fabulous Japanese cooking at Pen Yen as well as Soho House’s winning comfort food, and the chance to witness grown-ups giggling like kids as they wobble about on Foffa bikes, the preferred mode of transport. Of course, it’s all about the little touches: the barman in the roaming milk float who fixes doorstep G&Ts; the vase of wildflowers from the room carefully stowed in the boot of your car with your cases as a goodbye keepsake. Half an hour’s drive from Mérida, the state capital of Yucatán, Chablé began life as an 18th-century sisal hacienda, and many of its original buildings endure. Back when this hotel opened in 1995, there were few places in the Maldives to rival it. Landing here by seaplane felt like arriving at an escape cast out at the edge of the world. These days, neighbouring lights are aplenty, but this pristine paradise still feels wild enough to instil excitement. The groundbreaking barefoot ethos created by husband-and-wife owners Sonu and Eva Shivdasani ensures immediate surrender. Explore the island by bike, stopping to bob, chat, and giggle in the warm ocean for hours. Seventy rustic, thatched-roof villas, each hidden in the jungle shade (no stilts over water here) are designed with pared-back simplicity: natural tones, soft textures, lots of driftwood. Each comes with the softest organic sheets, huge daybeds, private pools, hammocks, and a sound system on which to blare out Nat King Cole. There’s snorkelling, scuba diving, surfing trips, and treatments in the spa (tension-soothing massages with lemongrass oil, rose-crystal lymphatic facials, a touch of Ayurveda). At the forward-thinking art studio, wine bottles are upcycled into sculptures. Food is central, with enough sushi to sink a ship, epic make-your-own salad bars, addictive egg appam, an ice cream parlour, a cheese room, and the new Out of the Blue restaurant, with slides straight into the sea. Not only do Mr and Mrs Robert Wtterwulghe share an extraordinary surname, they also hold the world record for the most visits made by paying guests to One&Only Le Saint Géran. The Belgian couple made their 88th pilgrimage here this past year. Few hotels inspire such loyalty. When it opened in 1975 it was, if not the only place to stay in Mauritius, the only one you would have wished to stay in. Its proprietor, South African Sol Kerzner, announced his intention to ‘blow the guests away’. In a sense, he achieved the opposite. They came in droves. They are still coming in droves. These days it is not uncommon for three generations from the same family to arrive simultaneously. Now Mauritius has the greatest concentration of five-star hotels of any island in the Indian Ocean and yet Le Saint Géran has in no way been overtaken. The changes made during a 2017 makeover were uncontroversial, either merely cosmetic or merely sensible. The number of rooms has decreased, and they are the very definition of tasteful neutrality, taupe and teal, as soothing as a sea breeze. The spa has expanded and there’s a new pool. But the essentials remain the same. The location – on 60 acres with a mile of flawless beach – is unbeatable. The spangled Alice Temperley teepee is still available for seaside revels.
