Today the guns are silent, but the walls remain and enclose a charming Old Town that makes Quebec City one of the most visited cities of its size in Canada. Opened in the late 19th century, the Chateau Frontenac was conceived as one of the original Canadian Pacific Railroad’s grand luxury hotels, constructed throughout the Canada. The Hôtel Manoir Victoria has a long history, dating back to the 1830s. Despite its age, the hotel has been recently renovated, and the exterior now hides an updated and contemporary interior, with sleek and modern décor. Rooms are spacious. Explore the island by bike, stopping to bob, chat, and giggle in the warm ocean for hours. Seventy rustic, thatched-roof villas, each hidden in the jungle shade (no stilts over water here) are designed with pared-back simplicity: natural tones, soft textures, lots of driftwood. Each comes with the softest organic sheets, huge daybeds, private pools, hammocks, and a sound system on which to blare out Nat King Cole. There’s snorkelling, scuba diving, surfing trips, and treatments in the spa (tension-soothing massages with lemongrass oil, rose-crystal lymphatic facials, a touch of Ayurveda). At the forward-thinking art studio, wine bottles are upcycled into sculptures. Food is central, with enough sushi to sink a ship, epic make-your-own salad bars, addictive egg appam, an ice cream parlour, a cheese room, and the new Out of the Blue restaurant, with slides straight into the sea. Situated nearly 80 miles southeast of Burlington, Twin Farms sits on 300 forested acres and offers just 20 rooms. Lodgers can explore the adults-only property via the resort's bevy of activities, whether it's downhill skiing on Twin Farms' six groomed trails or canoeing across the on-site Copper Pond. What's more, all activities are covered by the resort's all-inclusive rate, along with a host of other amenities, including all meals and alcoholic beverages, Wi-Fi access and evening bonfires with s'mores. Other on-site features include a spa and fitness center, tennis courts and bicycles – perfect for exploring the nearby town of Woodstock. Along with the bountiful activities, reviewers were also impressed with the accommodations, which range from rooms in the Main House to multi-level cottages. No matter which lodging type you choose, you'll find your digs outfitted with at least one fireplace, a fully stocked refrigerator, satellite TV and a selection of games, movies, music and puzzles. While recent visitors raved about the experience of staying at Twin Farms, they also warned that there is a high price to pay for this luxurious seclusion.
At this hotel on the pandanus-lined beachfront of Cabarita, the signature cocktail made with local Ink Gin changes from deep blue into shades of dusty pink. It completes the photographic panorama of navy and white sun beds, oversized sun hats and bronzed pool boys. It’s here, in this lazy coastal pocket halfway between the Gold Coast and Byron Bay, that the linen-clad set come to kick back on long, hot summer days. Among the 21 rooms by Brisbane designer Anna Spiro, no two are the same. Each is a revision in Sixties eclecticism, with brass fixtures, antique memorabilia and dark wood furniture whimsically combined with a Mediterranean sensibility of patterned floor tiles, starched linens and wall panelling. Bathers migrate from the pool to dinner at Paper Daisy, the hotel’s restaurant helmed by Noma alumnus Ben Devlin, to try flavours of the surrounding landscape. For breakfast there are kefir pancakes with macadamia cream, passionfruit and berries, and lunches of prawn sandwiches with iceberg lettuce and avocado. A Moroccan-accented day spa with a domed hammam-style steam room was added in 2017. But it is perhaps general manager Mauro De Riso, with his charming sense of Italian hospitality, that stands out as the greatest investment made by owners Elisha and Siobhan Bickle. There are other cities that possess a comparable crackle and fizz, a similar quotient of what Martin Amis once referred to as ‘italics in the air’. New York, naturally. Tokyo. London on a good night. Strolling into this hotel is a rich sensory experience unlike any other in town. The atrium is filled with a dozen ficus trees wrapped in delicate white lights and dotted with lavish ‘Are they real?’ floral arrangements. The answer is, of course. Since opening in 2005, Wynn has remained the high-rolling kingpin of Sin City names, partly because of its money-no-problem approach to design and services, but also because it likes to poach big spenders – as well as newly minted winners on the casino floor. There are nearly 40 designer shops (including two Chanel stores) spread throughout three shopping hubs, the newest of which, Wynn Plaza, just opened this autumn with a Cipriani restaurant and a SoulCycle outpost. Elsewhere, there’s a multiplicity of restaurants, nightclubs, a beach club, pools, spas and bars (our personal tip is the pretty Parasol Down for its fanciful cocktails and waterfall views). Rumour has it the cost to maintain the floral displays at Wynn and its sister tower, Encore, is in the millions. But not everything is gilded fantasy here. Wynn recently opened its own solar field, which offsets up to three-quarters of its energy usage, and every restaurant has a vegan or vegetarian menu. A golf course designed by Tom Fazio will open at the end of the year. The Strip has no shortage of hotels, but despite its size, the Wynn manages to feel intimate and draws a clued-up international crowd who appreciate a player with style. By Juliana Shallcross
